Pink Lemon Drop Jello Shots

Lemon Drops are delicious, Jello Shots are fun and Pink is definitely in. Made with WAVE Vodka’s Pink Lemonade flavored spirit these are totally fun and tartly tastey.

You’ll note that the recipe is a little different from regular jello shots. These Lemon Drop shots are a work of art so they need to set a little more firmly than you may be used to.

Ingredients

  • 6 large lemons
  • 1 envelope plain gelatin
  • 1/2 envelope of lemon Jello (that’s 1 1/2 oz)
  • 1/2 envelope of red Jello (I like cherry)
  • 1 cup fresh lemon juice
  • 1 cup WAVE Pink Lemonade vodka

Instructions

  1. Cut the lemons into halves
  2. Scoop out the flesh and set the lemon shells aside
  3. Squeeze the juice from the flesh and add extra juice to make 1 cup
  4. Pour the juice into a heavy-bottomed pan and sprinkle the plain gelatin on the top
  5. Let stand for 1 or 2 minutes then put over a low heat and stir continuously ’til the gelatin dissolves completely (about 5 minutes)
  6. Remove from the heat and add the lemon and red jellos. Stir until fully dissolved
  7. Add the vodka and stir again
  8. Pour the mix carefully into the lemon shells (if you place the shells in muffin pans it will keep them steady)
  9. Refrigerate at least 4 hours
  10. When set, cut each half into 3 slices using a very sharp knife dipped in very hot water between each slice
