The Grilled Pineapple
This is how I like Grilled Pineapple – with quality rum and martini style. If you don’t want to make your own you can stop in to the Ritz-Carlton, Naples, FL and have the bartender at The Grill prepare one for you.

Ingredients
- Pineapple
- Brown Sugar
- Vanilla
- Mount Gay Extra Old Premium rum
- Marasca cherry juice
- Fresh cherry for garnish
Instructions
- Grill pineapple with brown sugar and vanilla for about 5 minutes, ’til just caramelized
- Sous vide* for 4 hours
- Remove the mix from the sous vide pouch, chill and add to a martini glass with chilled rum and a splash of cherry juice
- *Sous vide is a method of cooking, sealed in a pouch, in a hot water bath
