The Grilled Pineapple

This is how I like Grilled Pineapple – with quality rum and martini style. If you don’t want to make your own you can stop in to the Ritz-Carlton, Naples, FL and have the bartender at The Grill prepare one for you.

Ingredients

  • Pineapple
  • Brown Sugar
  • Vanilla
  • Mount Gay Extra Old Premium rum
  • Marasca cherry juice
  • Fresh cherry for garnish

Instructions

  1. Grill pineapple with brown sugar and vanilla for about 5 minutes, ’til just caramelized
  2. Sous vide* for 4 hours
  3. Remove the mix from the sous vide pouch, chill and add to a martini glass with chilled rum and a splash of cherry juice
  4. *Sous vide is a method of cooking, sealed in a pouch, in a hot water bath
