A lovely cocktail with an aromatic combination of thyme, cucumber and gin and a refreshing fizz of soda.

Ingredients

  • 2 or 3 fresh sprigs of thyme
  • 3 cucumber slices
  • 1 slice or squeeze of lime
  • 1 1/2 oz gin
  • Tonic water

Instructions

  1. In a rocks glass, lightly muddle the thyme, cucumber and lime
  2. Add ice and gin
  3. Top with the tonic water
  4. Stir and garnish with a couple more thyme sprigs
