This classy variation of the martini replaces vermouth with fino sherry, a delicate and crisp dry sherry. The recipe is from Dale DeGroff’s menu at Blackbird in New York City.



  • 6 tablespoons gin
  • 1 tablespoon fino sherry
  • Strip of orange zest


  1. Fill a shaker with ice and add the gin and sherry
  2. Stir for one minute
  3. Strain into a chilled cocktail glass
  4. Twist the zest over the drink and drop it in
