Super Skinny Watermelon Salsa

Ingredients

  • 1 oz jalapeno vodka* (64 cals)
  • 1/3 cup seedless watermelon (15 cals)
  • 1/4 cup loose-packed cilantro (1 cal)
  • 1 lg mint leaf
  • Splash lime juice
  • 1/2 oz stevia syrup (0 cals)
  • Splash club soda (optional)
  • For jalapeno infusion:
  • 12 oz vodka and 1 1/2 fresh jalapenos

Instructions

  1. Muddle all ingredients except vodka
  2. When the mix is thoroughly mashed add the vodka
  3. Add cracked ice
  4. Top with soda
  5. Garnish with a wedge of watermelon or spring of mint
