You don’t have to be Cuban or old to enjoy this cocktail. It’s well-balanced, you can taste the alcohol but the flavors of mint and lime come through rather nicely.

- 3/4 oz fresh lime juice
- 1 oz simple syrup
- 1 1/2 oz aged rum
- 2 dashes Angostura bitters
- 6 mint leaves
- 2 oz dry champagne
- Muddle lime, syrup and mint in a mixing glass
- Add rum, bitters and ice
- Shake well
- Strain into a cocktail glass and top with champagne
