Frothy Squashy Cockytail
Saw this Frothy Squashy Cockytail (that’s no misprint) by Meghan Telpner on the National Post. Who would have thought squash would make a good cocktail? The original recipe called for 2 cups of water and was presumably served warm. I’ve changed that to 2 cups of ice to make this a frozen concoction.
- 1/3 cup butternut squash, steamed and pureed and cooled
- 1 banana (frozen)
- 1 Tbs hemp seeds
- 1 Tbs cashews, soaked (or peanut/almond butter)
- 1/2 tsp cinnamon
- pinch of clove
- 1-2 tsp raw honey (optional if you like a little sweet)
- 2 cups ice
- 1/4 cup St. Lucian Rum!
- (note: can replace water, cashews and hemp seeds for 2 cups of your fave nut or seed milk)
Place all ingredients into a high powered blender. Blend until smooth.
