Frothy Squashy Cockytail

Saw this Frothy Squashy Cockytail (that’s no misprint) by Meghan Telpner on the National Post. Who would have thought squash would make a good cocktail? The original recipe called for 2 cups of water and was presumably served warm. I’ve changed that to 2 cups of ice to make this a frozen concoction.

Ingredients

  • 1/3 cup butternut squash, steamed and pureed and cooled
  • 1 banana (frozen)
  • 1 Tbs hemp seeds
  • 1 Tbs cashews, soaked (or peanut/almond butter)
  • 1/2 tsp cinnamon
  • pinch of clove
  • 1-2 tsp raw honey (optional if you like a little sweet)
  • 2 cups ice
  • 1/4 cup St. Lucian Rum!
  • (note: can replace water, cashews and hemp seeds for 2 cups of your fave nut or seed milk)

Instructions

Place all ingredients into a high powered blender. Blend until smooth.
