High Sage Champagne Cocktail

You’ve probably never thought of sage as a cocktail ingredient but in the High Sage Cocktail it blends perfectly with the gin and champagne. This tipple was originally created by Craig Cooper, Wine Director for Pops for Champagne in Chicago.

Ingredients

  • 1 oz gin
  • 1/2 oz of sage simple syrup (recipe below)
  • Dry sparkling wine or champagne

Instructions

  1. FOR THE SAGE SYRUP:
  2. To 1/2 cup of simple syrup add 8 – 10 fresh leaves of sage, torn
  3. Let simmer ’til reduced by about 10%
  4. Cool and strain
  5. FOR THE COCKTAIL:
  6. Chill the gin over ice and strain into a white wine glass
  7. Add the sage syrup
  8. Top with the sparkling wine and stir
