The Beijing Bellini is an oriental take on the traditional Bellini and originated at New York City’s China 1 Antique Restaurant and Lounge.
- 1 oz Soho Lychee liqueur
- Dry sparkling wine or champagne
- Lychee nut
- Drop a lychee nut in the bottom of a chilled champagne flute (you can buy them peeled in a can)
- Cover the nut with lychee liqueur
- Fill the glass with the sparkling wine
