Espiritu Diablo
This is served at the Yacht Club’s Isa bar on the island of Ratua, Vanuatu. Yacht Club being rather a misnomer as the “fleet” pretty much consists of a few outrigger canoes. Sadly, I’ve never been there, but sipping this potion I can imagine myself on a warm evening watching the sky turn vivid shades of purple and orange as the sun dissolves over the horizon. Some day.

Ingredients
- 2 oz silver tequila
- 1 oz orange curacao
- Ginger beer or ale (Bundaberg ginger beer, if you can get it)
- Wheel of lime
Instructions
- In an ice-filled collins glass pour the tequila and curacao
- Top with the ginger beer
- Garnish with lime
- After you’ve admired the way the drink looks for a moment or two, squeeze the lime into it and take a satisfying first sip, preferably on a beach in some exotic port-of-call.
