
Mistletoe Cocktail
Mistletoe has been thought to bestow fertility, bring about peace and harmony, and kissing beneath it was once considered a promise to marry. None of which has anything to do with why I created this cocktail; I simply wanted a drink that was evocative of the plant’s colors. However, if you don’t have real mistletoe, you could grab the green chartreuse, whip up one of these babies and hold the glass over your head. (Ooops, should I have used the word babies?)

Ingredients
- 6 very fresh mint leaves
- 2 oz Green Chartreuse (the only liquor with a natural green color from chlorophyll)
- Dash of simple syrup
- 1 egg white
- 1 lg tsp superfine sugar
- Squeeze of lemon juice
Instructions
- Start by muddling the mint with the simple syrup in a lowball glass (and put some effort into it!)
- Fill the glass with ice and add the chartreuse
- Whip the egg white in a bowl ’til frothy
- Add the sugar and lemon juice and beat a little more. (You want foam, not meringue)
- Spoon the mixture over the chartreuse
- Alternately sip the drink and kiss your beloved (Or just sip the drink and daydream about the person you’d like to smooch)
