
Dad’s Champagne Cocktail
This was one of my dad’s favorite aperitifs to offer guests. He used to make it with Asti Spumante, which is rather sweet for my taste so I’ve used a dry sparkling wine and then rimmed the glass with sugar for a little extra sweetness.

Ingredients
- Slice of peach (preferably fresh, ripe and really juicy)
- 1 – 1 1/2 oz gin
- Your favorite bubbly
- Superfine sugar for rimming the glass
Instructions
- Rim a champagne flute with the sugar
- Drop the peach slice in the glass and cover with the gin
- Allow it to marinate in the fridge for a couple of hours
- Top with the sparkling wine
