Wish I’d invented this ‘cos it’s the perfect drink for my shipwreck treasure hunting pal, Cap’n Carl Fismer, whose nickname is “Fizz”. It’s also a really delicious cocktail.
- 1 oz absinthe or Pernod
- 1 tsp sugar (omit this if using Pernod)
- 1 oz lemon juice
- 1 really fresh egg white
- Soda water
- Shake all ingredients very, very well with ice.
- Pour, with the ice, into a highball glass.
- Top with soda.
